THE INSPIRATION:
We were approached by a friend at Sceptre Brewing Arts about brewing this beer;he had always been a big fan of Eventide’s dark beers and wanted to make one with us. He provided a lot of the specialty malt and the coffee that was used in the brewing process. Lactose is used in these beers (added during the boil) to lend a sweetness and full mouthfeel to the beer (lactose is a non-fermentable sugar). We added 20 lbs of coffee from East Pole post-fermentation. Part of the Ethos at Sceptre Brewing Arts is to be as local as possible with your ingredient selection, hence why everything used in the beer was available from suppliers in Georgia and North Carolina (no maltsters in Georgia yet). This beer was also slightly modeled aftera classic British example of the style which is why we chose to ferment with a British yeast strain and use British hops in the boil. Make sure you make your way over to Sceptre Arts Brewing at some point; it’s a really cool spot and the beers are excellent!
